Welcome to the site!

A couple things...check the grounds as indicated. This is related to you saying the dash was jumping around.

The wiring on these cars is older and can sometimes shrink or chafe, etc. Not as bad on the newer model LT1s vs L98s, but still something to consider. That being said, when you have it running at idle, go under the hood and start wiggling wiring and harnesses around and see if that affects anything.
