I remember reading that turning the crank while the timing chain is disconnected can damage the engine. How do I prevent it from turning while removing everything?

Before you take the chain off ,set just after TDC ,pull # 1 spark plug and jam 3 feet of 1/4 nylon rope in the cylinder then hand wind the crank back past TDC(anticlockwise)) until the piston locks up against the rope in the bore.
Or undo all the rocker nuts so all the valves are closed

Damage can arise if a piston comes up against open valves due to cam not being in sync with crank
