I'd start with some Hawk HPS. It's a good compromise for 99% street use and 1% track use. Ceramics won't grip as good, and oem pads will fade sooner. If the rotors looked chewed up, get them turned down at Pep Boys for $8 each. If you change either, bed the brakes in.

Change out all your fluids, ATF, PS, brakes, coolant for the hell of it. Screw SS brake lines. If your stock ones are cracked, then replace them with rubber. SS is overrated in my book. A street alignment will work fine, but zero toe and more negative camber will benefit you. I use Wilwood 570*F brake fluid, but any name brand fresh DOT3 compatible fluid will work for you. Stay away from silicone fluid.

Your goal the first trip out isn't to set any records. It's more of a test of the car, your nerves, and a humbling realization that you suck at driving and need practice. Oh and it's about the most fun you can have with your clothes on.
