My only experience with a Monk Beer was in Germany last fall, the brewery was started by the St.Sixtus Monks and I believe they had 3 main beers. All 3 were excellent with no bitter aftertaste. Hops were probably roasted which gave it a dark color with a distinct flavor when sipped slowly. Not a big beer drinker I just understand the chemistry behind the brew events.
