what temp should the fan come on?
kids sez gits real close to 250 sitting in drive thru,,fan did come fer awhile but then off..anything to worry bout here?

you need a real temp gauge vs using the analog on the dash.

It should come on at 228 or there abouts.

There's something wrong in the system
fan, relay, sensor, etc.

If it is like the 95 vette there are two cooling fans, controlledd by the PCM based upon readings from the ECT sensor on the water pump. The sensor on the right head is for the analog gauge only. Factory program is main fan on at 227-228*F and the aux fan (passenger side) on at 236*F.
