When I was taking off the driver's side cat tonight, I noticed a round hole in the side of the bellhousing, maybe about the size of a quarter - it is clearly supposed to be there, but is just open. Should there be some kind of plug or cover for it?

No plug available that I have ever seen, it's a site hole to check the clutch wear.

Thanks - just seems odd that it wouldn't have some kind of plug or something. I did a quick search for any reference to it in the Woodchuck's Handy Guide (FSM), but didn't find anything.

Don't worry about it. There are some cars that don't even have an inspection cover, and the entire bottom of the flywheel is exposed.
