I am about to pull mine out and replace it with another D36. I have done 1/2 shafts and hubs, have been under the vette plenty of times and have the full FSM set, and a lift.

So here is the question. Do I need to pull the batwing, or is it possible to switch the 'chunk' with the batwing in place (a short cut maybe)?

Nothing to be gained, the batwing is the back cover of the pumpkin and removing it from the car only requires removing two more bolts. When you do the job you will see it would actually be more difficult to use your "short cut", especially going back together.

Yup. Pulling the whole thing is easier. Use a floor jack or tranny jack to drop it out.

Plus you don't have to remove the cbeam this way from the trans. But be sure to put another jack under the trans somewhere.
