So, I been working this winter on a crust that doesn't taste like cardboard. It's getting better and better with each new batch.

I've only been to Reno once. Went to, "New Yalk Pizza". Great pizza, ice-cold draught beer, Hot August Nights.

Been there quite a few times, it's OK, one of the better ones in town, but it's not New York.

But then, going to Hot August Nights is way more fun than eatin' pizza. Damn shame I have to go every year.

Yes but it's the humidity levels and you may have to adjust the hydration level (don't ask) of the dough.

I got tired of the local pizza crusts, even the Italian Mon&Pops. All thse places make nice, sorta tasty pizza but not like you wouald get from Lombardi's in NYC.
So I started a year ago, from a cookbook and got a sticky mess that I couldn't get off my fingers, tasted too bad to eat (cardboard). Then went to FoodTV, Emeril's and even both recipes from our fave Alton, weren't any better.

Then I went to pizzamaking.com. Don't go there, they are absolutely insane. I've spent hours and hours there trying to come up with one recipe for NY style.
And finally did.

Now, I can weigh ingredients, mix and kneed a dough ball in 10 minutes. And this dough doesen't stick to your hands at all, comes out just like the pizza shop, has flavor, crunchy on the bottom and chewy in the middle.
And a 13 inch pizza costs me $4 vs the shops.

I also make my own sauce.

If there's any interest, I can post my "how to".

Your quite the little homemaker. All those years of concocting formulations is finally paying off with a formula for Nevada pizza dough. If you've finally worked it out I've got something for ya.

Besides, I got hooked on really good food being on an expense account for 20 years.

I do feel sorry for the guys who depend on their wife to feed them, you know, the ones that can barely grill a steak outside without screwing it up.

I learned to cook years ago. I like to eat home cooked meals or in restaurants with home style cooking. For me it was a matter of survival. My mother was great cook and she spoiled me.

Mine too and I have all her recipes, good ol home cooking.

20 years of the four star restaurants with no out of pocket expense got me into doing the dishes that more like that. But, I make more home cooked stuff than the fancy.

Pizza's a whole different deal, you can get good pizza everywhere but you only get great pizza in a few places.
